Gaintza Txakoli

In July, Drink Better by Olé & Obrigado features a special introduction to the Txakoli wines of northern Spain’s Basque region. Txakoli (CHOCK-oh-lee) wines are as unique as the Basque language and culture they come from: slightly effervescent, bone-dry, with brilliant acidity and salinity from the maritime climate. Txakoli’s low alcohol (usually under 12% abv) and light body make for a refreshing glass on its own or myriad food pairing opportunities. Basques drink this wine all year with their world-famous cuisine, but spring and summer are the best times to enjoy this wine with farmers market produce and your local seasonal seafood.  

This pack allows you to compare and contrast two distinct regions: Getariako Txakolina (Gaintza) and Bizkaiko Txakolina (Berroia). Gaintza is a small winery making a “coastal fishing village” style of Txakoli with more pronounced salinity, citrus flavors, and light effervescence. Berroia is located in a national forest in the mountains, and shows a slightly rounder palate with stone fruit flavors and bit more weight.

An ‘escanciador’ is a type of txakoli-pouring device, which allows the movement of air into the glass by pouring from a height. The 'escanciador' pourer has two vacant sides: one side is for the air to enter the bottle, and the other for the wine to pour out from. The purpose of this pourer is to “break” the Txakoli in the glass, giving it a quick injection of air bubbles, and you should drink the Txakoli immediately after pouring it. Billion Oyster Project was founded in 2014 by Murray Fisher and Pete Malinowski, who envisioned a healthy, biodiverse New York Harbor and who shared the belief that restoration without education is temporary.  Billion Oyster Project has expanded on that idea, offering public school students, volunteers, community scientists and restaurants the opportunity to learn about New York City’s rich oyster history and lead the movement to restore it. Restoring oysters in one of the busiest ports in the United States is particularly challenging, but they have an amazing team and a dedicated community behind them.
